Leonidas Dark 70% Cocoa

Interesting… Most chocolate bars use chocolate liquor or just say “chocolate”. Not the Leonidas bar. It lists among its ingredients cocoa paste and low-fat cocoa powder.

Correct me if I’m wrong (and I have a lot to learn so I probably am) but I thought that the finer the cocoa bean is ground, the more the flavors are released?

Pastes and powders seem like their particle size would be greater than liquids. Also, they use low-fat cocoa powder. Why bother since it’s a dessert?

The box advertises “100% cocoa butter!” This claim is especially confusing since cocoa butter is not listed in the ingredients. However the nutrition information lists plenty of fat calories (170 out of 260 Cal total). So maybe Leonidas claims the cocoa butter as a naturally occuring ingredient in the cocoa paste?

I found the flavor of the bar to be dark, rich and also “dry”. It was lacking the “juiciness” that most other chocolate bars have. That isn’t necessarily a bad thing… “Dry” wine is just another flavor of wine. So maybe it would pair well with the Leonidas 70% dark chocolate bar.
